CHRISTMAS RECIPES FROM CELEBRITY CHEFS

In exactly one month it will be Christmas. No fancy dinner parties outdoors, but do it yourself cooking at home. To spark creativity, MASTERS select a starter, main and dessert especially for the holidays with instructions from renowned celebrity chefs.Text: Larissa Schaule Jullens

Starter

Star chef Jos Grootscholten cooks the stars from heaven at Het Parceel in Capelle aan den Ijssel. His appetizer is the perfect kickoff to an outstanding Christmas dinner. A tartare of dorade with chopped avocado, fermented tomato, radish and grapefruit. A light starter in which all the flavor elements reinforce each other. Serve a glass of Viognier et voilá with this dish.

Main Course

The main course by Gert Blom and Jan van Dobben - the former and current Patron Cuisiner of star restaurant Amarone in Rotterdam - is guaranteed to please. A tender Anjou pigeon with a cream of parsnip, grilled parsnip, coullis of blueberries and a slightly spicy coffee gravy is an excellent and special dish for the holidays. It may take some time, focus and discipline, but the end result is quite something. Pair this main course with a glass of full-bodied Bordeaux.

Dessert

The last course is certainly no less important than the previous dishes. Time to really unpack with something special can be had with a dessert. Star chef Wouter van Laarhoven of restaurant de Molen in Kaatsheuvel has definitely lived up to the term special. This mille feuille of dark chocolate, balls of orange and ocal of sugar with olive oil is not only pleasing to the eye, it is also surprisingly delicious. The combination of savory and sweet will be talked about for a long time. The whole thing goes perfectly with a glass of Barberani Moscato.
