Inter Scaldes***

Carsten: “Inter Scaldes in Kruiningen, Zeeland. Three Michelin stars and the absolute top in the Netherlands together with De Librije by Jonnie and Thérèse Boer in Zwolle. The Manoir Restaurant of Jannis and his wife Claudia owes its name to its location in the polders of Zeeland on the narrowest part of South Beverland between the Oosterschelde and Westerschelde. Beautiful garden where you can enjoy lunch or dinner in the summer. Jannis prefers to cook with regional products, Oosterschelde lobster, oysters, mussels from Zeeland waters and suckling lamb from the country, but also vegetables such as sea lavender and samphire. You can land here with the helicopter and sleep in one of the 12 beautifully decorated rooms. Every dish from Jannis is a feast for the eyes and taste palettes. Art plays a major role in his latest book and this can also be found in the restaurant and throughout the hotel. Inter Scaldes is the absolute Champions League, not only for Dutch people, but for guests from all over the world, it is worth the trip!”

Daalder

Carsten: “Dennis Huwae is an absolute talent and was chef at Moshik Roth (**) for many years. He has been co-owner of Daalder in the Amsterdam Jordaan for a few years now. A small intimate restaurant with a terrace where star-level cooking is done in a tiny kitchen. Insiders have been tipping Dennis since he settled here as a great contender for that coveted Michelin star, which has not yet materialized. But it will fall one day, undoubtedly. Daalder is full of known and unknown Netherlands every evening. Dennis is very successful with delivery and takeaway menus and even brought them throughout the Netherlands! New is Edel by Dennis, in Het Sieraad on the Postjesweg in Amsterdam with street art by artist ELLE from New York. An accessible business with affordable dishes and the quality you can expect from Dennis. Also with a beautiful terrace on the water.

Park Hill**

Carsten: “Culinary history was written in the famous round building by architect Klunder in the Rotterdam park near the Euromast on the Maas under the leadership of the previous owner Cees Helder. Parkheuvel was the first restaurant in the Netherlands to be awarded 3 stars by Michelin. It was therefore big news when Erik and his wife Anja took over the Parkheuvel restaurant in 2006. Michelin almost immediately awarded Erik with “his own” two stars. The restaurant has an art deco design and the terrace has a beautiful view of the water. Erik van Loo cooks subtly, but with great flavors. His kitchen produces elaborate and technical dishes. Their son Juliën has been back in the business for a few years now. He did an internship and worked in Dutch and foreign restaurants as a Creative Chef. Juliën redevelops his father's classics into contemporary dishes with a new twist. This brings together classic and modern, with recognizable flavors.
