Hidden in the woods

Carsten: “I was recently surprised by Henrico van Lammeren, the CEO of Vinites, who is our exclusive wine partner at Restaurant M. We had an appointment to discuss the wines for the upcoming edition of the pop-up restaurant and he knows better than anyone that I have already seen and tasted almost everything in the culinary field. However, as a location for our meeting, Henrico sent me an address in Soest that I had never been to before. Hidden in the woods is restaurant 't Spiehuis, owned by the Herfst family, with a beautiful terrace and ample parking.

Classical

Carsten: “The interior contains a lot of shiny copper, beautifully laid tables and there is a grand piano in the shop. Exactly as it used to be and still is. The menu is classic and strong in terms of dishes that come from the kitchen. Pure nostalgia and your mouth is already watering when you open the card. It is not without reason that various top chefs, whether or not they have been awarded one or more Michelin stars, like to come here on their day off. Not only the dishes, but also the sublime, humorous service and a wine list with nothing but gems. But what is on the map? Think of the classic shrimp cocktail with mustard-truffle mayonnaise, thick, fatty, smoked eel on toast or a terrine of duck foie gras. Or fried sole, tournedos Rossini (or Stroganoff!), but also delicious crispy sweetbreads. But this is just a selection from the menu. So my advice is: experience it yourself in 't Spiehuis!
