A new culinary trump card

Raymond Plat, Niels Leijssenaar, Willem Alberts and Roderick Kunst have joined forces for the new restaurant Troef in Weesperzijdebuurt, Amsterdam. At Troef you will find a menu with a classic French base and, from time to time, a Mediterranean accent. An à la carte menu bearing the signature of chef Raymond Plat: honest, ambitious and accessible.

Top-level ambition

Niels Leijssenaar: “Troef originated as a working name, but it sounded so good to us that we stuck with this name. Especially because in our vision of hospitality you always have to have an ace up your sleeve. Whether it is a special vegetarian dish or an extra table for unexpectedly more guests: everything can be arranged at Troef. With our broad menu and wine list we ensure that the door is open to everyone. Come in because we always have a few tables available for walk-ins or reserve a spot at our open kitchen. We are happy to make sure you feel at home with us!”

Restaurant Troef is a collaboration between these four gentlemen, who have all learned the tricks of the culinary trade in various top restaurants. The shared ambition to set up a top-quality restaurant brought them together.

The entrepreneurs

Raymond Plat was in the kitchen from an early age. Hundreds of pizzas flew over the counter at Fratelli in Giethoorn in his time. Afterwards, Martin Kruithof took him under his wing in the Lindenhof and, through Jonnie Boer's De Librije, he eventually ended up in Amsterdam with Richard van Oostenbrugge. He worked his way up to become chef of Restaurant 212.

The floor will be led by Niels Leijssenaar and Roderick Kunst. Niels has worked as the Hospitality manager of the Ron Blaauw Group for the past eight years. The hospitality skills he learned there will provide Troef with a warm bath and a living room atmosphere. His excellent sense and knowledge of hospitality ensures that every visitor can enjoy a good glass or nice bottle, from Burgundy, for example, or from one of the other four areas that Troef focuses on.

Roderick Kunst forms a business duo together with Willem Alberts. After a shared past at Ron Blaauw, where they also met Niels, they opened ESCOBAR in 2017. After a few years, they decided to open a restaurant together again. In their ambition they found collaboration with Niels and Raymond, which led to the opening of this new restaurant in the Weesperzijdebuurt in Amsterdam.
