Sterrenchef Bas van Kranen opent restaurant Flore in hotel De L’Europe Amsterdam

September started nicely for chef Bas van Kranen* and his team. Namely, he opened restaurant Flore in hotel De L'Europe Amsterdam. Flore replaces the renowned restaurant Bord'Eau that closed its doors. Last year Van Kranen and his team decided it was time for a new course in which creativity, sustainability and pure products are central. Bas van Kranen, together with chefs Sidney Schutte**, Jermain de Rozario* and Michel van der Kroft**, will cook the stars from heaven at MASTERS EXPO star restaurant M* on Sunday, November 21, 2021. Image: Chantal ArntsWith Flore, Van Kranen expresses his love for light dishes and local ingredients produced with respect for people, animals and the natural environment. In putting together the menu, research and experimentation play an important role. Each week, the team goes into the country in search of the finest ingredients in the Netherlands. They then use these in the weekly changing menu.

"By focusing entirely on using local products, not cooking with dairy and using crops that are grown sustainably and with the utmost care, we motivate each other to cook even more creatively and consciously. It makes us better cooks," says Bas van Kranen.With the elegant simplicity of Flore, the restaurant moves from classic gastronomy to conscious and high-quality cuisine - at Michelin level - where the seasons set the tone. The name Flore comes from the word "flora" meaning "blooming. The name suits the personal cooking style of Van Kranen, who at Flore uses products he finds from farmers and growers who treat animals with care and have an eye for biodiversity. Flore's kitchen uses no dairy products, and vegetables occupy an important place on the menu.

In the basement of his restaurant, Van Kranen started a fermentation lab where he makes juices and pickles vegetables, among other things. Here guests can drink special wines with a matching dish. 'Conscious fine dining' is what De L'Europe calls the new cuisine. The new restaurant likes to take its guests on an adventure and make them aware of what they are eating without adopting a pedantic tone. Flore's mission is to pamper guests with the pure and fine flavors of all the best that the Dutch soil and seasons have to offer.

De L'Europe Amsterdam

The history of the hotel De L'Europe Amsterdam dates back to 1896. Once built on the remnants of the old city wall, the hotel has developed from an exclusive hotel in the city center to a patron of Amsterdam culture and style. De L'Europe Amsterdam offers its guests 111 rooms and suites. In the basement is a luxury spa and wellness. The hotel also offers its guests several restaurants and bars. These are restaurant Flore where chef Bas van Kranen and his team are in charge of the kitchen, brasserie Marie, Graziella and Freddy's bar, the legendary bar where the late Freddy Heineken loved to come to relax. De L'Europe's concierges, the Clefs D'Or, are happy to point guests to the finest and most local that Amsterdam has to offer.
