He visits restaurants so often that at home at the table he looks for the menu out of habit. Like no other, culinary entrepreneur Carsten Klint knows where to make reservations.

Chef Peter Gast and his wife Jacqueline van Lier opened their "speakeasy" restaurant four years ago on Paardenstraat, around the corner from Eden Hotel Amsterdam. You receive a QR code via WhatsApp on the day of your reservation that allows you to open the entrance door and enter the world of Graphite. Peter and Jacqueline had more than earned their spurs with their star restaurant 't Schultenhues in Zutphen, but could not resist the attraction of Amsterdam. Guest is culinary entrepreneurial, always looking to innovate and improve. Inside, it's a club-like setting, intimate and international. But the plate must speak, and it does: Michelin rewarded the chef once again with a Michelin star in 2020, just two years after opening. With classic preparations and surprising Asian influences, he creates dishes with depth. You can choose from the menu or just go "all the way" as he himself says: his menus count 10,12 or 15 preparations and for vegetarian or vegan dishes Peter Gast does not turn his hand away. In fact: he wants to be progressive in this respect.

't GANZENEST *

What a past this restaurant has! Henk Savelberg, who currently has a Michelin-starred restaurant in Bangkok, was cooking there as an "exile" when the papal nuncio threw a spanner in the works for the plans of his new restaurant in The Hague. Harry Visbeen, another cooking icon, moved his downtown The Hague restaurant to its current location at the Rijswijk Golf Club and also took the name with him, which, by the way, the restaurant carries again. The once youngest star chef in the Netherlands, Niven Kunz, settled there after he left Wateringen (he has since returned to the old location in Westland). And then came Erik Tas from Leidschendam, where his other restaurant Bij Erik was awarded a Bib Gourmand for price-quality by Michelin. He brought the allure of yesteryear back to Rijswijk and exceeded both himself and expectations: barely nine months after opening, the inspectors of the red dining bible rewarded 't Ganzenest with the coveted Michelin star.

WIESEN *

Patron-cuisinier Yuri Wiesen was captivated by the cooking profession as an adolescent and decided at sixteen that he could only learn the trade from the best. After gaining twenty years of experience in various top restaurants and eventually reaching the position of head chef, he opened his own Restaurant Wiesen in Eindhoven in 2010. With success, as tire brand inspectors awarded the establishment its first Michelin star within four years. His cuisine is classic in origin, but contemporary with influences from all over the world. Evergreens that cannot be left off his menu are the three preparations of foie gras, turbot with truffle and pigeon roasted on the carcass. Characteristic of his style is that what you read on the menu is also reflected on the plate. Affordable and accessible enjoyment is important to Yuri.
