HIMKOK | Oslo, Norway

Behind an unassuming wooden facade in downtown Oslo lies one of Europe's most innovative bars: HIMKOK. The name literally means "house distilled," and that's exactly what you'd expect. HIMKOK has its own microdistillery, producing gin, aquavit, and vodka on-site; and you can taste the difference.

The bar comprises several spaces, each with its own unique atmosphere and menu. There's a classic cocktail bar, a cider bar with Norwegian natural wines, and an intimate speakeasy-style space. The menu is strongly seasonal and inspired by Scandinavian flavors: think cocktails with pine needle syrup, wild berries, or pickled herbs.

What truly sets HIMKOK apart is its commitment to sustainability and local craftsmanship. Even the ice cream is hand-carved from large blocks, and the garnishes come from their own greenhouse or are locally harvested.

Alux Cave Bar | Playa del Carmen, Mexico

Alux Cave Bar is located in a natural cave just outside the center of Playa del Carmen. The space, partly formed by thousands of years of geological activity, has been carefully adapted into a bar and restaurant, leaving the original rock structures largely intact.

The atmosphere is earthy and serene, with soft lighting that emphasizes the subterranean character. Guests walk through narrow corridors to various seating areas scattered throughout the cavern. The acoustic effect of the stone walls creates a quiet, almost sacred atmosphere. The menu features Mexican wines, classic cocktails, and local specialties.

Platform 18 | Century Grand, Phoenix, USA

Platform 18 is part of Century Grand in Phoenix, a concept bar offering a variety of themed experiences. This particular bar is designed to resemble a luxurious 1920s Pullman train, complete with uniformed bartenders, gleaming leather seating, and a meticulously designed interior that accurately reflects the era.

The space can accommodate only 36 guests at a time. The train concept is enhanced by digital screens that display a passing landscape along the "windows." All of this is the work of a former Disney illustrator, which explains the attention to detail.

Reservations are made through a ticketing system; no ticket required for admission.

Backdoor 43 | Milan, Italy

Four seats, one bartender, and a mysterious atmosphere: Backdoor 43 is probably the smallest cocktail bar in the world. Nestled in the heart of the Navigli district, it's easily recognizable by its small shuttered window. Without a reservation, knock on the door and the bartender will slip you a surprise cocktail through the shutter.

But the real experience begins when you're allowed inside. With a reservation, you'll have the bar all to yourself (and your party of up to four people) for an hour. Inside, it feels like stepping into an old apothecary's cabinet: dark wooden shelves overflowing with bottles, mysterious maps on the ceiling, and details that will keep your eyes wandering.

You choose your music, talk to the bartender about your taste preferences, and get customized drinks.

Galaxy Bar | Dubai, UAE
